Recipe and Review: Jerk Chicken the JUST ADD way.

JUST ADD tubes are ready prepared tubes of all your favourite essential ingredients: Garlic, ginger, chilli, basil, coriander and sun-dried tomatoes.

I was sent some tubes from JUST ADD earlier this week and tonight I decided to try some of them out in our evening meal.
Jerk Chicken
For the marinade

1 tbsp groundnut oil

1 tsp JUST ADD garlic paste

1 tsp JUST ADD ginger

1 tbsp rice wine

2 tbsp light 
soy sauce

2 tsp jerk seasoning (I buy mine from Aldi but other varieties are available)

2 tbsp honey
A pinch of Salt and Black Pepper
To serve
Juice of half a lemon
For the marinade, place all of the marinade ingredients into a large bowl and stir to combine. Add the chicken and cover the bowl with cling film, then place into the fridge to marinate for at least 15-20 minutes, ideally overnight.

Preheat the oven to 180C/350F/Gas 4.
Place the chicken drumsticks onto a roasting tray and roast for 30 minutes, or until the skin is golden and the chicken is cooked through.
Once cooked squeeze over lemon juice to taste and serve with rice (my favourite is mushroom fried rice).
What I loved about using JUST ADD in this recipe is how easy and clean they were to use.  Garlic and Ginger (the tubes I used in this recipe) are notoriously fiddly ingredients and the fact I didn't have to do any peeling, chopping or crushing whatsoever was a real joy.  I also loved how smooth the garlic was in contrast to a crush garlic clove, as much as I love it there is nothing worse than getting a large piece of garlic that hasn't disintegrated or been crushed small enough. I definitely think that the garlic is the paste I will use the most and as the tubes keep for up to a month in the fridge I'll have plenty of  time to use them all.  The herb tubes will also be a complete life saver as I often forget to buy fresh and I don't really like dried.  The flavours packed a real punch, definitely as good as the fresh ingredients normally would do, so if you cook regularly from scratch you really would be doing yourself a favour by popping a couple of these JUST ADD tubes in your trolley the next time you're shopping.
