Jordans Cereals Recipe Challenge - Summer Apple and Raspberry Super Nutty Granola Topped Crumble

 
When the lovely people at Jordans Cereals approached me and asked if I would like to take part in their new recipe challenge I jumped at the chance. I love Jordans and we regularly buy their cereals in the Toothpaste household.  What I love about Jordans is that although they aren't the lowest calorie cereals out there you get quality, nutritious ingredients that look and smell divine and not an E number in sight! 



 
 The kids gobble up the Honey and Nut Country Crisp every morning and I know they've had a great breakfast that will set them up for the day.  However Jordans want to show everybody that their cereals are great for other occasions apart from breakfast too, and I was more than happy to come up with a recipe to prove just that.  The recipe I came up with was a Summer Apple and Raspberry Super Nutty Granola Topped Crumble.  I chose the Jordans Granola to use in this recipe as I thought the consistency was perfect to spread across the top of the fruit and the nuts would give a wonderful crunch to the crumble once cooked.
 
Ingredients:
 
100g Caster Sugar
100ml Water
4 large apples (I used standard cooking apples), peeled and cored.
1 punnet of Raspberry's
1/2 teaspoon of high quality vanilla essence
The juice and Zest of 1 lemon
1/2 teaspoon of ground Cinnamon (if required)
200g of Jordans Super Nutty Granola
 
To make the filling, boil the water and sugar together, then carefully drop in the apple chunks and simmer gently for a couple of minutes.  Add the raspberries. 

Add the vanilla, cinnamon and the lemon juice/zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish.

Sprinkle the Granola over the top of the fruit.

Bake in the oven that has been preheated to 180 degrees for 25 to 30 minutes until the fruit is cooked and bubbling over and the crumble is golden.
 
I served with a fabulous Raspberry Ripple Ice Cream and fresh raspberries but you could serve with Custard if you prefer that.
